Tall, tender, golden pancakes with crisp edges — the weekend breakfast that makes everyone slow down.
Method
Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl.
In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla until combined.
Pour the wet into the dry and stir until just combined. A few lumps are fine; overmixing makes tough pancakes. Rest the batter for 5 minutes.
Tip: The lumps disappear as the batter rests — resist the urge to keep stirring.
Heat a nonstick skillet over medium heat with a little butter. Ladle in about 1/4 cup of batter per pancake. Cook until bubbles form and the edges look set, 2–3 minutes, then flip and cook 1–2 minutes more.
Tip: The first pancake is the test pancake — the pan is always a touch too hot or cold.
Stack, top with butter and maple syrup, and serve immediately.
