Method
Pat the shrimp thoroughly dry and season with salt and pepper.
Tip: Dry shrimp sear instead of boil — moisture makes them rubbery.
Heat the olive oil in a large skillet over high heat. Add the shrimp in a single layer and cook until pink and just curled, 1–2 minutes per side. Transfer to a plate.
Lower the heat to medium, add the butter, garlic, and red pepper flakes. Cook, stirring, until the garlic is fragrant, about 45 seconds.
Tip: Keep the heat moderate so the garlic perfumes the butter instead of burning.
Return the shrimp to the skillet with the lemon juice and parsley. Toss until coated and just warmed through, 1 minute. Serve immediately with lemon wedges.
